OK, let me explain. It’s true that while we often pair everyone’s favorite creamy spread with sweet things like jelly, peanut butter can also play well with savory ingredients like cheese. I love how the cheese combines with the creamy peanut butter to make a sensa- tional sammie, but it may not be your jam (see what I did there?). INGREDIENTS
2 teaspoons unsalted butter, room temperature
2 slices sourdough or other bread of choice Cooking spray
1⁄3 cup shredded sharp cheddar cheese (Use hand-shredded cheese from a block for better melting)
2 tablespoons creamy peanut butter
DIRECTIONS
1. Spread 1 teaspoon of butter onto one side of each bread slice.
2. Spray a large skillet or griddle with cooking spray, and heat on medium-high. Place one slice of bread in the pan, butter side down, for 1 minute.
3. Evenly top the bread in the pan with the cheese, and cook for an additional minute, until the cheese melts.
4. Spread the peanut butter on the unbuttered side of the remaining slice of bread. Place the bread peanut butter side down on top of the cheese-topped bread in the pan. Flip sandwich and cook 1 more minute.
5. Remove sandwich from the pan with a spatula, place it on a cutting board, and let it sit for 1 minute. Slice in half and serve.
